One thing I've seen at Pennsic, that I didn't see on your list, is
mushrooms. I've ID'd two edible species- puffballs, and morels (also called
"peckerheads" because that's what they look like).

I'm sure there's more stuff, but I haven't paid attention, other than
harvesting a bit of jewelweed (with permission) for a friend's poison ivy.
