     Fudge is a chancy beast, and using a reliable candy thermometer is 
definitely advisable.  Also, some candy is affected by the humidity, and you might 
need to cook a degree or two higher if the day is very damp. But a good candy 
making book is also a great help, and there are LOTS of them out there.
