That's because us Yankee's have something called Malakite blue. It's a
harmless die used in Organic Chem and untastable in diet coke. Or so
I've been told. My opinion of red velvet cake  has always been it sounds
neat but tastes like red food coloring.

Yes.   It's actually very good.   Very light, yet rich.  (It's just as 
good sans food coloring, btw.)  It's one of the traditional flavors for 
groom's cakes and a favorite for potlucks where I grew up.  Warning - 
Don't eat too much, or your residue will be colored for a couple of
days. 
Freaks out the D**n Yankees.  ;>
