Well, yes, it is soy based, using a recipe Marina sent me off-list. However
it is *not* like a tofu turkey, since it tastes -- and, more importantly,
has a mouthfeel -- just like "real" cheesecake. We try to come up with
dishes that are dairy-free but good in their own right, and this is
definitely a keeper.

I used Tofutti cream cheese substitute and Tofutti sour cream substitute,
and Ghirardelli bittersweet baking bar. (Their semisweet baking bar has milk
fat, though their semisweet chocolate chips don't. Go figure.)
