For those who are looking for a non-dairy pumpkin pie, you might want to consider thickening it
with a simple-syrup and gelatin mixture, if the almond or coconut milk ideas don't appeal to you,
and you won't eat eggs.  Another option is a panade soaked in apple cider and runthrough a food
mill (or blended) to maintain the creamy texture.
