I think the writer will actually be just about on-the-mark with the 1 lb of beef per gallon of
broth, because the soup is going to have Kasha in it, as well.  The buckwheat will swell, and give
the soup body.  Rather than increase the beef, I'd add more kasha if it seems too thin.  Besides,
there will be bread on the table, as well, which will help bulk out the meal.  Keep in mind this
is a 'Traveller's Fare' offering, which (if I understand the author correctly) is simply to
provide a little sustenance to those arriving on site.

Come to think of it, I wouldn't have a problem eating a meal like that on any day of the event.
