Sorry, I usually do this by taste, so I don't really have any measurements:

4-5 fresh tomatoes, peeled, seeded, and chopped
1 can white corn, drained,
onion, chopped
fresh cilantro, chopped
fresh garlic, chopped (I cheat and use the pre-chopped in a jar)
ground cumin
salt
olive oil

soften onions in a frying pan, add everthing else and cook for a couple 
of minutes. chill for at least 4 hours before serving.
