Hi Maire,

A Lurker here,

If you have a some turkey left over, especially the bones, put the remains 
in a large stock pot full of water and proceed to cook on medium heat for 
several hours.  Pull out the turkey and de-bone it, return the meat to the 
pot.  Continue cook until the liquid starts to get very cloudy – reducing 
the stock a fair amount.  (I hope you like my cookery terms here.)

At this point you have a couple of choices, make a turkey pot pie, using the 
turkey broth for flavor in the pie.  The second which is bit more 
interesting is to add your veggies to the pot and then add either drop 
dumplings or cut dumplings.  The second method uses all the stock, whereas 
the first you will most likely have some stock left over.  My own children, 
ages 13 and 14 had rather eat my pot pie than the turkey and they love the 
turkey.  I on the other hand enjoy the meat-veggy-dumpling one pot meal.  It 
cooks all day and is even better the second day. Once the dumplings are 
added you need to take a bit more care to ensure that they don’t stick to 
the bottom of the pot.

If you are out of turkey parts, chicken will work.  Also I have used a 
tougher cut of beef to make the same.  I sort of check to see what is on 
sale at the market before I decide.  It really drives the wife crazy – not 
knowing what I am going to cook.
