I live alone. I like butter (unsalted). I buy 1 lb. at a time, put 
one stick in the fridge and the rest in the freezer. Keeps fine. I've 
kept butter for up to 1/2 year. I imagine it would keep a bit longer. 
Only problem might be odor, if one has an odoriferous fridge/freezer.
