Lime Meringue Pie

<>5 Tbs corn starch
2 cups water
1 cup sugar
1/4 tsp salt
2 egg yolks slightly beaten
2 Tbs butter
5 Tbs lime juice
2 tsp grated lime rind

Blind-bake a 9" pie crust.

Mix corn starch with 1/2 cup water in top of double boiler, blend in 
sugar and salt.  Add rest of water, blend well, stir constantly over low 
heat until mixture boils. Cover and cook over boiling water 5  minutes.  
Gradually pour hot mixture over beaten egg yolks, stirring constanly.  
Return to double boiler and cook 2 minutes longer.  Remove from heat, 
add butter, lime juice and rind.  Mix well, cool and pour into pie shell.

Beat 3 egg whites stiff, gradually add 6 tbs sugar, pile on top, bake in 
slow oven (325) for 15 minutes (or until meringue turns golden).

For slightly stiffer filling, use 6 tbs of corn starch.
