Papaya is used in some over the counter meat tenderizes, so you can cook
with it. You can also get a peppermill and put the dried seeds in it and use
that as a tenderizer.

Papaya has an enzyme that breaks down the bonds between the muscle
fibers. So do pineapple and other similar exotics. So, as a sauce
prepared on the side, it'll work. Just don't cook or marinate with it,
and I wouldn't store the meat and the sauce together.
