That's what the method has evolved into. But the reason it is
_called_ scampi is that that method used to be applied primarily to
actual scampi, the crustacean of that name. Shrimp scampi is that
scampi dish made with shrimp as a substitute. Interesting that we
should have simultaneous discussions on shrimp scampi and chicken-
fried steak; there are some interesting parallels.
