Vittoria,

Which specific recipes are your questions from. I have a print copy of the Anonymous Tuscan, printed int he Arte Della Cucina. It includes for want of a better descriptions clarification of some of the obscure terms. But they are listed under each individual recipe. eg trasmarino - rosmarino, cennamo: dan cinnamomum: canella etc.
Also have you considered letting Cindy Renfrew know you have done this. She is co-ordinating the web publication of culinary manuscripts. http://members.aol.com/renfrowcm/msproj.html

Hello, fellow medieval culinary adventurers. :-) I was on this list a
while ago, then vanished 'cause life (read: school) got too busy, and have
just signed back on because of a particular project. I translated a
cookbook, but I've run into a couple of stumbling blocks,
interpretation-wise, and I figured if there was help to be found, it would
be on this list!

The book is the anonymous Tuscan "Libro della cocina," dated late
14th/early 15th century (more or less). <snipped>
