not too challenging!
I keep 30 days worth of MRE's or similar meals for emergencies, we have a 
freezer full of longhorn beef, and various home grown fruit and vegetables 
in storage, with fresh eggplant and califlower, turnips, cabbage, 20 pounds 
of potatos, some yams, onions and garlic, and rice, unbleached wheat flour, 
and oats, .  I se in the "fridge" we have 3 pounds of carrots, some borsch 
and fresh beets, and eggs.  To get more eggs, I'd have to go out to the 
chicken coop, would that be cheating?  I only have one gallon of milk, 5 
galloins of beer almost ready, several gallons of wine, great for cooking 
and drinking.....  oooh, some fish, frozen, smoked, salted or packaged.... 
various fresh garden herbs. three or four cheese, (does feda count)?.  (Some 
dried mushrooms, I would need to go to the store for fresh mushrooms and 
some more honey!

So, simple menu for a week,
lots of variations on a theme of soup, plus side dishes of Califlower fried 
in egg batter, (I like olive oil, but my wife prefers sunflower oil),

Wednesday
Breakfast,
mushroom Omelets w/ oatmeal
Lunch
Borsch with beef, egg battered cauliflower and fresh salad, wheat bread with 
raisins.
Dinner leftovers plus canned cherries in a pie.

Thursday
Breakfast
Cream of wheat and borsch
Lunch
Rice soup, with carrots, garlic, onions and herbs, with beef meatballs.
Dinner
Bread, cheese, apples, and ground beef with garlic and mushrooms.

Friday
Oatmeal with raisins and apple slices
Lunch
bread and beef sausages, with cheese and apples
Dinner
Fish soup, with rice, onions, garlic, and various herbs.

Saturday
Breakfast
Oatmeal with honey
Lunch
Fish soup, spiced up with cut green and yellow peppers from cupboard,
(began soaking tonight's steak in mead at lunchtime).
Dinner
Steaks soaked in mead, cooked with turnips, carrots, onions and garlic,
just before they are finished, cover with cheese for a melted cheese
steak that melts in your mouth!  Fresh baked bread and dessert is a
fresh baked pie from cream cheese, and black current preserves.

Sunday
Brunch
Omlets, from free range hen eggs, beef sausage, onions and cheese.
Leftover pie and bread from last night.

OOOPS!
populace meeting Sunday evening, a friend treated me to pizza,
but I didn't buy it or get anything from teh store for it!  :D

Monday
slept late, skipped breakfast
Lunch
Baked fish and cheese sandwiches, used up the last of the fresh bread,
better make more dough!
Started the dough, and soaked Romertopf clay pots for tonight's meal of
Roast Beef, onions, garlic, carrots, beet slices and turnips.  I added whole
sunflower seeds to the bread dough for a bit of a difference.

Tuesday
breakfast
oatmeal with sliced dried apricots and sour plums
Lunch
leftover roast beef sandwiches!  with Swiss cheese
fresh cabbage sliced thin, with feda cheese and olive oil salad
Dinner
more leftovers, took the roast beef and made a beef and rice soup,


Wednesday  today,
Breakfast
Omlets with cheese, peppers and onions.
Lunch
Beef sausage and bread and cheese and apples.....
Dinner.....
decisions, decisions.....
I think I have a few cans of chicken ....
or MRE's if I get tired of eating fresh food....

yes, several of the above dishes are easily found in Apicius!
The orange carrots are not "early period" and "American
cheese" is not period....
canned anything doesn't come into use in our period.
