No one has mentioned brownies yet.. they are easy to make and sell well.
This makes a quadruple batch that fits my large baking pan.

Bake Sale Brownies (based on Joy of cooking)

8 c sugar - almost a 4 lb bag
3 c or 8 oz Cocoa (a whole can)
1 lb butter, softened
16 eggs
2 T vanilla
4 c flour
4 c chopped nuts (optional)
1-2 bags of chocolate chips (optional)

Preheat oven to 350.
In med bowl, mix the cocoa and half the sugar, work out any lumps.
In a large bowl, cream the butter and the rest of the sugar.
Stir in the eggs and vanilla and mix well.
Gradually mix the cocoa mix into the batter, and beat until smooth. 
Fold in the flour and nuts, don't mix too much, a few streaks of flour are ok.

Spray a 18x13x1 inch pan with cooking spray and pour in the batter.
Bake for 30-35 min or until done.
If you like, spread chocolate chips on the top, let them melt, then spread
smooth. If you put nuts in the brownies, sprinkle a few more on top.
Let cool before cutting.   This makes 100 or so brownies.

Single batch
2 c sugar
3/4 c Cocoa
1 stick butter, softened
4 eggs
1/2 T vanilla
1 c flour
