Check out Professor Michael McVaugh.
Since 1975 he has been a general editor of the collected Latin writings
of one of the most
famous of medieval physicians, Arnau de Vilanova (d. 1311). His vitae
and list of publications is at
www.unc.edu/depts/history/faculty/pdf/mcvaugh.pdf

This is the sort of search that can be done at the Library of Congress
website.
www.loc.gov
He's listed as Arnaldus, de Villanova, d. 1311 for a subject heading and
under
the same for an author search.
Little in English except--
The earliest printed book on wine / by Arnald of Villanova ; now for the
first time rendered into English, and with an historical essay, by Henry
E. Sigerist ; with facsimile of the original edition, 1478. De vinis.

That one is in Rare Books by the way so it's rare.
How's your Latin? There's lots in Latin.

As for Regimen sanitatis it's out in a number of volumes, incl. this
English edition from 1649

health. Containing, most learned and judicious directions and
instructions, for the preservation, guide, and government of man's life.
Dedicated, unto the late high and mighty king of England, from that
university, and published (by consent of learned physicians) for a
generall good. Reviewed, corrected, and inlarged with a commentary, for
the more plain and easie understanding thereof. By P.H., dr. in
physicke, deceased. Whereunto is annexed, a necessary discourse of all
sorts of fish, in use among us, with their effects appertaining to the
health of man. As also, now, and never before, is added certain precious

personage.
London, Printed by B. Alsop, 1649.
2 p.l., 206, [12], 207-220, [3] p. 19 cm.

This one ought to be available on EEBO or microfilm at most university
libraries.

You can also try for this one--
The school of Salernum, Regimen sanitatis Salerni; the English version
by Sir John Harington.
Salerno, Ente Provinciale per il Turismo [1966]

That's the one I own so it has been available.
I'll let you run the rest through LoC on your own.
