Well, kinda both. But only "period" recipes. If an ingredient isn't 
available here, no one can use it. And i want fresh, not frozen or 
canned... September isn't exactly the height of summer most places, 
but it's usually the hottest month of the year here in coastal 
Northern California (although judging by the weather for the past few 
weeks, i'm having my doubts - it has been like July and August - all 
grey)

When i cook, i try to use what's in season here (do i *really* want 
strawberries flown up from Chile?).

I mean, roses bloom all year round here (that was a shock to me when 
i moved here permanently in the winter of 1968-69 - roses in 
February! I'm from north of Chicago and roses only bloomed in June 
and a little of July)

But if the feast has a seasonal theme for Europe, then i try to use 
what would have been in season in Europe.

So for this competition, i want "period" salad recipes using fresh 
ingredients. Competitors do have to have documentation, so i leave it 
to them to choose
