I'm a little frightened by the recipes that tell
you to open tin cans of ingredients,  cook them further in a stew,
then pressure-can them, but perhaps this is somebody's idea of being
practical while still observing traditions so ancient their meaning
may be somewhat obscured...

Hmmm.... sort of reminds me of an account I read many years back.  A fellow
in the British army in WWII was working with towed artillery pieces and was
reading the printed "manual of arms".  It called for two persons to move to
the rear of the gun so many paces back before firing.  No reason was given.
He researched it and discovered that the instructions were carried over from
those of an earlier time.  The fellows moving to the rear in the original
were to be there to hold the horses so they would not bolt when the gun was
fired.
