A friend made some preserves once with honey (mulberries) years ago and said
that a whole replacement of sugar with honey tends to smother the flavor of
the fruit and that replacing only half of the amount of sugar with honey
gave a balanced flavor.

Now I want to try to make strawberry preserves with honey. Not sure
about specific proportions, I will probably just cover hulled berries
with sugar and let them cook until done.

I am just tickled to death with the original article. I dearly love
cream tea.
