The 'loss of lore' is a well-documented phenomenon in all modern societies, 
and here in Germany, meat of all kinds has long been marketed to consumers by 
an artificial vocabulary detailing its use. Thus, you won't get "beef round" 
but "stew beef from the round" (this is a broad analogy, our cuts are 
different). In order to be an informed consumer in Germany, you don't even 
need to know the specialised terms. 

Sheesh, I thought Americans were *good* at customer convenience...
