Try Kitty Morse's "A Bibical Feast: Foods from the Bible".

Pretty well researched, but this is definitely by a food author/chef not a
historian, but the research surprised me.

According to other things I've read, the Passover foods are the same as
everyday foods with the exception of grains and fermented alcohol. Matzah
meal was just used in place of flour. If lamb was not available, kid was a
popular choice, and leeks are considered a Passover food.
