Albumen was used with lime and heat to clarify the cane juice in the early 
stages of sugar making into the modern period.  The lime is still used to 
clarify the cane juice, but centrifugal extraction of molasses followed by 
activated carbon filtering replaces the gravity extraction and albumen.
