There was some discussion earlier this week about medieval sugar
processing. Someone mentioned the work by Gavan MacBane. I just
finished getting Gavan's paper added to the FOOD-SWEETS-DECORATED
section of the Florilegium.

Cypriot-Sugr-art (54K) 8/ 5/06 “From Cane To Kitchen: An
Investigation into
                                        Medieval Processed Sugar” by
Gavan
                                        MacBane. Sugar processing in
Cyprus.

Because of some oddity in Word that causes the RTF version of this
file to balloon from 3 Mbytes in Word format to 220 Mbytes in RTF
format, I have chosen to store this file on the website in Word
rather than RTF format. Unfortunately, while working with this file,
I also discovered that because of the way Word 2003 generates HTML
code, compared to Word 98 and because my conversion program was
written for Word 98's HTML output, the link in the file to the text
and RTF versions is not always being created. I will work on that
upon my return from Pennsic.

I the meantime, for those who might need it, the Word version of this
article is available at:
