[Sca-cooks] OoP: Crudites

I'm cooking for a friend's wedding, as i've mentioned, mostly modern
food, with a few historical recipes. Among the hors d'oeuvres is the
old stand-by of raw vegetables with dip.
So far, i'm including "baby" carrots, celery sticks, jicama, and raw
green beans.
I don't want to include broccoli, as it's one of the vegetables. And
i want to avoid tomatoes so people don't get squirted on their best
clothes. So, besides cauliflower, what else would anyone suggest?
