Many years ago, when we were enjoying using the Lorna Sass books, since they
really were about the best that any of us had access to, a friend did that
pea recipe in King's Taste (?) that's a soup, and instead of getting X lbs
of fresh (green) peas, she got X pounds of dried green peas.  The resulting
recipe tasted okay, but my lord, we had pounds and POUNDS of the dried ones
left over!
