Oh my....yes, mustard is definitely period.  There are many, many period 
recipes ranging from the sweet (i.e., a reddish mustard from Platina...I 
think the recipe is in the Florilegium) to some really hot ones.  I have 
made mustard sauces...the one that comes to mind is a mustard sauce for 
pork brawn...and there's also a late-period recipe for hard-boiled eggs 
with a mustard sauce.  I don't have time right this minute to send you 
the recipes, but will try to do so when I get past the work deadline I'm 
looking at this afternoon.
