It's very period. In fact, in some areas it appears to be THE
condiment used at table.

Mustard is also a lot of fun to make. There are several sources
of creating it in period which should be easy to find on the
web.

One recipe I vaguely remember (sorry at work and no reference
books) involve grinding mustard seeds, ginger and red wine to
a paste and letting age.

Another, Lombard Mustard, uses honey.
I'm sure you will get a lot of recipes, I'm sorry I can't help much
since I don't have my books and no coffee yet.
