feastgoers here have an
entirely unexpected liking for sauerkraut.  I made it for a feast once
not knowing whether they'd like it or no, but they gobbled it all up
along with sausages and brown bread.

Assuming that you can find a period recipe they might like kimchee as well.
Hmmm... I smell an A/S project!  "Fermented Veggies of the 16th Century" or
"Period Pickles, a Cross Cultural Comparison".
