The back story here (sometimes I don't remember what gets posted to
which list) is that I posted the evening menu to the local group's
list, hoping people would get a clue that this was really happening,
and either send in checks before the day or at least give the event
steward a firm commitment on whether they were coming.
I said that if I wasn't going to find out until 5 minutes before
dinner if I was serving 15 people or 120, and find out the hard way,
at that, I was serving everybody Tuna Helper. We discussed the
different flavors, and I think everybody wanted to try the Creamy
Mexi-Tuna Skillet Dinner in honor of Cinco de Mayo (I think the
actual Mexi-Tuna Skillet Dinner wasn't actually creamy; I probably
combined different concepts from the Betty Crocker website and it was
more frightening that way, anyway).
In the middle of all this, a week before the event, after
constructing a menu designed to generate minimal dish-and-pot-
washing, minimal delay between the service of dishes and courses, all
cooked on three portable propane burners and a grill, one person
began to gripe [admittedly, mildly] about a lack of soup on my menu.
As it happens, I did not add a soup to the menu, but Mistress Andrea
did add one to hers, for the dayboard. The gentle who had requested
it proceeded to show up late and almost missed it.
