There's that about a harvest festival...

Mashed potatoes made with vegetable stock, garlic, and some really  
nice, green EV olive oil kick booty.

In addition, I was just reading somewhere (Melissa Clark???) a recipe  
for cod for which a side dish was brandade. This was confusing since  
brandade is supposed to be _made_ from salt cod, usually milk- 
simmered salt cod, potato and/or bread as an optional stabilizer,  
lots of crushed garlic, and enough olive oil to form a thick, light,  
fluffy emulsion when it's all pounded together. This was a rather  
potato-rich brandade, served more or less in lieu of mashed potatoes,  
to accompany the fresh cod which was the main ingredient.

I don't imagine that, since the salt cod element had been sort of  
downplayed, omitting it entirely for some non-fishy application would  
be such a terrible thing.
