I usually bow to Selene's wisdom in all things but I must differ - I often 
remove the cover to check on MB progress - fending off hoards of nephews with 
the lid. Never have the MBs sunk.

A surprising number of people we kow use the Streit's mix - it tastes pretty 
good, even the broth. It's a good alternative if you don;'t have time to make 
a home-made chicken soup, but you don't save much time and effort on the MBs 
themselves. I still consider it cheating, but (as you must have noticed) I am a 
bit of a MB snob...
