Kiri recommended The Cream of Peanut Soup from _Vitginia
Hospitality_. So I tried it, kinda.

I had to substitute a few things. First, Dear Hubby gets tummy aches
from peanuts. Replace with cashew butter. There is no such thing as
light cream in groceries around here. You can have Half'nhalf, or
whipping cream. Replace the light with whipping. I was a little shy
of chicken broth, so I topped off the 2 cups with Turkey broth. It
was a bit too thick at the end of cooking, so I thinned with another
quarter cup of broth.

YUM!

Not only did Doug & I like it, Doug's risk-averse & fussy 92 yr-old
mother really enjoyed it.

It was smoother on the second day, and much thicker. I added more
broth.

It had thickened to a glop by the fourth day. The consistency was
almost that of hummus. It was GOOD dipped up with pita bread. So,
I've added both a soup & a dip to my repertoire. Thanks, Kiri!

Next experiment: try it with almond butter! Also, my cheapskate soul
& onion loving palate cringed at discarding the celery & onion.
Maybe I'll whirl them in a blender & return them to the pot next
time. Forcing them through a sieve or a tammy would be the period
method, I know, but I've not got the energy for that right now.

Maria
