I've never made cannoli, but the recipes that I've seen call for deep frying them on the form.  What happens when you deep fry the wood?  It  might work, but I suspect the wood will not be able to be re-used.  Not more than a few times anyway.  I wonder if wrapping the wood with foil would help?
