I'm not familiar with Mario's recipe, but the one I've got recommends using a brown paper lunch bag for the "mold."

  Subject: [Sca-cooks] panettone paper mould

  hello;

  i am experiementing this weekend baking various
  new recipes. one is for panettone.

  i was wondering if anyone on the list would have
  ideas on how to make a panettone paper mould out
  of parchment paper. i could just use a tube pan,
  a cutdown coffee can, or an aluminum foil lined
  heavy walled cardboard tube used to form concrete
  piers.

  the panettone recipe i am going to use is mario
  batali's recipe.
