[Sca-cooks] measuring flour and pound equivalents

Look on the actual sack or container. It's often given as to what
the equivalents are for that brand and type. Yes the brands do vary.
Most comprehensive cookbooks contain a section where they list 
ingredients and talk
about measurements. It's usually found in the front sections. Often they 
will
note differences there and list specifications for their recipes.
