We are also going simple tonight, as I am fighting off a nasty cold and have
spent most of the day sleeping. I hope I will feel better and have more
energy to deal with and enjoy the very excited nearly three-year-old over this
time.
Tonight's menu is a family comfort food favorite, baked mac and cheese with
ground beef cooked into it. My uncle gifted us with a good chunk from a
wheel of very good cheddar which will become part of the mac and cheese. (He
also sent us proper bacon and honey - this stuff is high enough quality that he
could safely priority-mail the bacon without putting it on dry ice, and it's
fine...true salted and smoked bacon.)
Tomorrow we are also looking at some sort of seafood for dinner, not sure
what quite yet. I am figuring on sausage gravy over biscuits for Christmas
morning, followed by my in-laws traditional late lunch/early dinner of turkey
and as many starches as they can fit on the table, with possibly a small
vegetable dish beyond the broccoli in the rice/broccoli/cheese casserole.
