[Sca-cooks] Horseradish cream sauce

Are you making your Horseradish cream sauce or buying it already  
made? The only thing I've made with fresh horseradish has been the  
period candied horseradish. I usually buy my horseradish sauce pre- 
made, but I've been a bit disappointed in many of them. Way too mild.

That's even happening in the restaurants. I got introduced to  
horseradish sauce with fried mushrooms at Bennigan's restaurant many  
years ago. That was hot enough to bring tears to my eyes. I've often  
tried fried mushrooms at other restaurants but have disappointed when  
all they had was a wimpy ranch dressing or such to serve with them.  
When we were at a Bennigan's recently, I was looking forward to my  
old favorite and ordered it, and to my great disappointment found out  
that they, too, now serve it with a ranch dressing. Sigh.

I think the Arby's horseradish sauce is my favorite commercial  
horseradish sauce, since it is smooth and still has a bunch of kick  
to it.

I tried the frozen pre-breaded mushrooms at home, once. They lost all  
their breading in the hot oil. :-(
