Sorry to belabor this point, but anyone who is interested in that whole
thing I was talking about can find a treatment of Char Siu (chinese bbq
pork) in the most recent issue of Cokks' Illustrated, which just arrived in
my mailbox today.  Talk about timely and grist for the mill.  Seems I
already use their favorite hoisin sauce, too :o)
