[Sca-cooks] what do you do with Quinces?

There seems to have been some confusion.  
While talking about Quinces, Helene mentioned that she had seen some small
golden ones in the market, then said that what she had seen had actually
been kumquats, then asked what kumquats were good for, to which I replied,
that they were good eaten raw.  Quinces aren't nearly as good eaten raw.
