Well, yes, I'm familiar with beer soups overall, but since this is
sweetened and contains no flour (which is what I'm more familiar with
in modern German cookery), I'm assuming this is not quite the beer
soup you and I are familiar with, and the technique for thickening
with eggs (as opposed to using them to make egg drops) is as I've
described. And, since it contains no stock, the ingredients profile
makes zabaglione a fairly reasonable frame of reference. I'm assuming
it would be thinner, and taste like beer instead of wine, but I
specified the former and the latter is pretty obvious.
Funny, since modernish French cookery refers to things being
Allemande, which generally refers to things thickened with eggs, but
I haven't seen a whole lot of that in the German cookery I've been
exposed to.
