I don't know the site, but the "Italian Stew" recipe appears to be my redaction for "Pie in a Pipkin" from Epulario.  I posted it to rec.food.cooking in 1994, under the more generic (and understandable) title of "Medieval Italian Stew", and it seems to have spread far and wide.

I would guess that the site owner found it -- and the other recipes -- around the Web, possibly without attribution.
