Check out Six Thousand Years of Bread; Its Holy and Unholy History by H.E.
Jacob ISBN1-55821-575-1.  You might also take a look at the 16th century
book "A Description Of England"  Can't remember the author or where I put my
copy but you can find it on line.  It has a several page discourse on bread.
