I couldn't find the orange flower water I thought I might have, so  
when I went to the store I looked through the various flavorings they  
had in their baking section and found "Orange Extract" and "Cinnamon  
Extract" both by McCormick. Both are alcohol based 79% and 51%  
respectively, with  oil of orange or extractives of cinnamon. I have  
no idea how the first compares to Orange Flower water. While I did  
taste the batter after adding the flavors, I was also conscious that  
I sometimes over season things for some people's taste. I didn't want  
to add too much. I also wasn't sure how much the strength of the  
taste might differ between the batter and the baked wafer.

I thought of orange juice, but not of using frozen OJ concentrate,  
which I didn't have anyway. I had some dried, grated orange rind, but  
I was afraid that might end up leaving crunchy bits I didn't want.  
Given time, soaking the dried orange rind bits in wine might have  
worked well.
