well ... it removes all the air in the bread.  really all of the air in the 
bread.  What remains more resembles the dough before rising than the bread 
after baking.

When you open the package one might expect that it will again imbibe air and 
fluff up

NOPE

The kids put it in the microwave for ten seconds, slabbed it with butter and 
jelly and pronounced tasty ... but it was not the intended result.




One can seal the bread without suck option and it stays good for a longer 
time, or it seemed to.  The test drive was not conducted with scientific 
precision.
