Paul Kinstedt is one of the leading luminaries in the
cheese science world.  We also have, yes, the Cheese
Nun (Benedictine Sister Noella Marcellino).  She
specializes in rind formation.  

Mr. Kinstedt has encapsulated admirably the steps
involved in the cheesemaking process, nicely succinct.
 This article is a keeper, it's going in my cheese
binders.  Thank you Daniel!!!
