Cat talks about pigs ears in the last message, subject "Creamed eggs,
rotten eggs, raw food, and other family foods." In previous messages
there are references to "ears" as a dessert.
In Spain 'pig's ears' are the real McCoy they consist of chopped
cartilage from the outer ear of cows or pigs fried with beef or pork or
boiled with herbs and served with a sauce as an appetizer.
'Carnival ears' ” are deep fried pancakes. These are made especially for
the Carnival season. A batter consisting of flour, eggs, milk and sugar
is fried in boiling hot olive oil, which makes the batter grow into
shapes like flowers or ears so say the texts but to mine really do look
like piggy's ears.
It is interesting to note that all parts of our porkies in Europe are
put to use in one way or another, nothing is discarded so it is not
surprising that each country must have their ear-y recipes.
