Altitude differences, simulated by pressure differences in an airplane,
change the boiling temperature of water. This can affect cooking in a
variety of ways. (Tea tastes really good in England to someone from
Albuquerque, altitude 1 mile.) It's why there are those high altitude
directions in the fine print on cake mix boxes and the like.
