The ultimate tarte tatin requires a generous dollop of creme fraiche.  Even
better than plain cream 'cause you get that delicious tang...

I don't really have a favorite dessert, modern or historical -- there are
too many, especially if one's definition of "dessert" is sufficiently
flexible as to include cheeses. ;-)

But on the subject of period desserts, I've always had great success with
Digby's "excellent small cakes," even though it's technically a 17th-c
recipe.  Every time I bring them to an event, they fly off the plate.  I'm
making up a batch tomorrow since there's a dessert potluck at our
principality Coronet this weekend...
