Hmmm,
The evening milking is likely to have lower butterfat content, and any
possible "green" taste (caused by grazing wild onions, pig vetch, and a few
other weeds, or even sometimes just really new grass) will be stronger in
the morning.

Subject: [Sca-cooks] A question about cheesmaking

My husband ran across a cheese recipe that calls for the milk from the
evening milking. Is there a significant difference between the morning milk
and the evening milk?
