Our local group hosted a little collegium in small park. I taught a class on making fresh cheese aka Paneer. It was done on a camp stove on a picnic table. We strained the cheese through the cheese cloth and then hung it from tree limbs out of the way. Later, we stirred in fresh herbs, minced candied ginger, etc. and added our results to the pot luck lunch along with crackers, etc. I've also pressed it well to form a solid mass, cubed it and used the Paneer cubes in Matter Paneer, an Indian recipe with peas and paneer in a very tasty sauce. I have also used vinegar but I love the light lemony flavor the juice gives it. At home I too, hang it over the sink!
